Cabin Cuisine

One of the best things about being at the cabin is that there are very minimal worries.

The one biggest worry we have at the cabin is wondering what we are going to make for breakfast, lunch, and dinner.  I really love to cook but I find that there are too many other tasks at home preventing me from really trying out new recipe ideas.

So every summer at the cabin, I get to dabble in my secret love of cooking.

This year the focus was on quick & healthy.

My new favourite breakfast is The Egg-White Burrito.

6 egg whites (We use Naturegg. Each container contains 16 egg whites)

1 whole wheat flatbread (found at Costco but you can use a flour tortilla)

1 1/3 tsp. (7ml) extra virgin olive oil

1 oz. (28g) low fat cheese (I prefer a hard white cheddar. You can buy them portioned from Costco)

Spices to taste.

Mix the egg whites and olive oil together.  We scramble them in the microwave until they are at a texture that we like.

Then I add the cheese and any spices.  My secret ingredient: Chili Powder for zippy eggs.

Warm the flatbread & then place eggs on one side of the flatbread.

I like to add baby leaf spinach & the Man also likes some thinly sliced local Kootenay tomatoes.

Voila. The Breakfast Burrito.

We like to add some watermelon on the side to make a complete meal.  It’s also a quick meal to take with you out on the boat for after your first morning wakeboard pull.
